I have a set of 205/50/15s but I'm looking to go bigger while staying with
the same OEM rim.

Can anyone tell me what happens if I go up to either
215/50/15
or
225/50/15?

I have 215/50/15 Dunlop 5000s on my '94 GS-R 4 door with stock rims
and Eiback Pro-Kit springs. With 4 people in the car, one of the rear
tires will rub ever so slightly in a hard turn. Other than that, no
problems, just improvements.
