I have a GXL Cruiser.
The standard tyres are 275 16 70   will 285 's fit on the rims?

Is it true that if you put on a tyre that is wider than the recommended tyre
size, that it has a more likely chance of rolling off the rim when deflated
for sand driving?
Or is this only a problem if you get too crazy and go way over board with
the tyre size?

I don't know myself...just asking

Any tyre will roll of the rim if driven without proper care
as for a wider than standard, you will really only run into problems if
you go too wide
not so severe problems would be the centre of the tread wearing faster
than the rest of the tyre so not getting the full tyre life
