It's been a few years since i installed a system so i just wanted to run this
by you guys to make sure i have it right.

I have a 2 channel amp rated at 2x200w rms at 4 ohms or 1x800w max at 4 ohms.
My 2 subs are JLaudio 10" rated at 8 ohms. Is it ok to hook up one sub to each
channel or should i bridge the amp and wire both subs in parallel which will
give me the 4 ohms the amp is rated for?

Bridge the amp and wire the subs in parallel.  That will give an overall
4-ohm load to the single amplifier channel.
