i have 2 rockford 600 watt amps and i want to run them to a 12" Jl W7.
on the side of the box its mounted in it has 2 sets of posts with a
metal piece connecting them should i just remove the piece and connect
1 amp to one and the other amp to the other set of posts.

Are the amps externally bridgeable or "strappable"? That would be ideal.
Otherwise, if the amps are identical you can do as you say and put one
on each voice coil. You just have to make sure that you've got the gains
matched properly to each amp so one isn't working harder than the other.
You could damage the subwoofer and amps if not well-matched.
