Do you think popping a sunroof up while the car is parked in the sun
actually makes the interior cooler?  Assuming all the windows are
closed, is the small roof vent enough to make a difference?

Any kind of circulation in there is going to help somewhat.

No - but it does allow the birds perched on the lamp post above to
sh.t directly onto your leather seats...

Based on my experiences in several different cars, yes.  The inside of
the car gets hot enough that the temperature differential between
inside and outside the car starts some airflow, similar to a
thermosyphon (no water pump) cooling system.  It's still freakin' hot
when you come back to the car, but less so than with the sunroof
closed.

Yes, it helps.  Try cracking the side windows just a bit too.
