My 94 Caravan w/3.0 has recently started delivering poor heat. Except
when cornering. Heat is mediocre at best, but when you turn (more
noticeable on left turns), the heat comes right back up to where it
used to be (damn hot). Engine temp gauge always remains steady, just
under half, where it's always run once warmed up. Coolant is good, and
level is up.
Any ideas? I'm stumped...

You don't say anything about the last time you changed or flushed your
radiator system. It almost sounds as if you don't even have enough coolant
in there to begin with, but if its been a few years (more than 2), I would
recommend you do that and check your thermostat to make sure it is in
working condition.

Although not having enough coolant would cause it to overheat....

Coolant is good, and engine temp remains steady and where it always
has. I covered both those bases in my first post.
