I have an 83 Celica (fuel injected, 22 ERI). The engine stalls if I
pump the gas over 4-5 times or if I rev it up to over 2500-3000 rpms
(which may still be associated with pumping the gas as I may not be
holding my foot steady). I f I hold my foot on the accelerator during
the stalls, the rpms drop down to about 500. As soon as I remove my
foot from the accelerator, it returns to idle. It runs fine as idle.
Spark plugs, distributor cap, and fuel filter are new. Before I start
diddling around with the fuel pump (which is accessible through the
trunk but I've been told I have to drop the gas tank to get to it) can
anybody offer any other assistance.

Sounds like a fuel delivery problem. I'd check the fuel pressure before
deciding to replace the fuel pump.
