It is definitely not a good idea for an engine to run cooler than designed.
It will result in sludging and excess wear of the engine and generally
improper operation since the entire lubrication, fuel and ignition systems
are based on proper temperature. You might want to have the cars checked to
see if the temperature is actually too high or if it is just a gauge
calibration issue. I suspect the latter.

The intelligent thing would have been for GM to use a numeric
temperature guage in the SS versions as they do in the "not so fancy"
ones.
