1989 chevrolet k-1500 4x4 with 4.3L engine.  During brake application
the vehicle "hops" or feels like its bouncing up and down slightly.
I'm guessing the rotors/drums might need replaced to fix this.  any
other suggestions as to what this could be?

Sounds like you are on the right track.

You might also check your shocks, front drive shafts, steering parts, front
bushings, and hubs.
But your first guess is mostly right, a out of round drum or warped rotor.
