Yo... not again... unfortunately yes once more..., 2001 Fiat Punto (the
same one) steering works great, and then without warning the power
steering warning light comes on at the dashboard, and the power steering
fails. If the engine is switched off and then restarted the power steering
will function perfectly well for another few miles and then cut out again.
There are no leeks from the steering rack and the cut out period is
totally random. It can happen after travelling 5 miles or 105 miles....

You need to check your manuals/other information.
As far as I'm aware the Punto came with Electric and not hydrualic power
steering back in 2001.
Certainly later years had the Dual Drive (City Button) electric power
steering.
If you have the electric power steering then if it is not working correctly
then there should be a fault code logged in the body computer.
Your Fiat dealer / good independent garage should be able to read this code
and advise you from there.

is your battery fully charged the electric power steering uses a lot
of power from you battery if there is not enough power in the battery
the power steering relays will trip the power steering off.
