Somewhere along the line my 3 gallons of coolant keeps disappearing. There
are no drips or puddles. There's nothing in the oil pan. There's no
misfirings and the engine runs smoothly. There's no overheating. So where
is is disappearing to? Does anyone have any ideas?

Checked for combustion gases in the coolant? not familiar with your
particular engine but "mystery" coolant disappearances are often head
gasket leaks between a cylinder and the cooling passages. If that's the
case, you'll find out soon enough when it gets worse and either starts
blowing steam or hydrolocks.

You'd better add oil or else your engine is going to be toast.

And the answer is, I had a bad radiator cap. I was told the way you tell is
look in the radiator after filling. If you see bubbles it's a head gasket.
No bubbles and no apparent leaks replace the cap. I love these $8
repairs....
