Anyone know of any real easy way to get behind the intake at the back of the
engine to replace the pcv valve on a 5.0l? Aside from sending in trained
gremlins?

Removing the engine from the vehicle would make access rather
simple.   ;)

Mike is such a kidder!

It isnt easy.. and what's more... you should check the oil-separator screen
below it; often is gummed up from dino oil/moisture gunk.  Even if oil
changes were ritual.

Small lite and mirror, long bent-nose pliers.

for more search this group on google,

5L 5.0 pcv screen

There is no easy way, you just have to reach back there and do it. Be
careful not to break the PCV hose as they become very brittle.
There is also a screen below the PCV valve in the intake that should
be replaced as the screen tends to clog also. Remove the grommet that
the valve fits into and the screen is below that. If you think the PCV
valve is hard to get at wait until you try the screen. I use a small
slide hammer to remove these screens but a long pair of needle nose
pliers also works.

Good luck
