I noticed the coolant light is on, and stays on.  The coolant level is
full.
Does anyone know what could be causing it to come on?  Could it come
on from driving to fast, etc?

check your expansion tank and make sure you have enough coolant in there.
If you just added coolant, tap on the side of the tank to clear air bubble
at the coolant level sensor tips.
