On a scale of 1 to 10, how difficult is this to change. Any advice you can
give is appreciated.

I'd give it a 3, wait till engine is cold(overnight) to relieve pressure
before you start. Here is some info:

if everything is operating properly the pressure won't bleed down overnight.

Have you ever changed the fuel filter?

Assuming the person doing the change is a novice, and calling an oil change for
a novice a 3, I'd say a fuel filter is a 4.5.
www.autozone.com (on the right click on "free repair guides" and follow the
pointers) should have step-by-step directions.
I have always changed my 91 Civic's fuel filter. (Two changes now at 156k
miles.)
One thing I usually forget about is buying new banjo bolt washers. Autozone
sells them.
