I think it will not be too difficult to reinstall it, but...

What is the easiest way to make sure the steering wheel is centered
when the wheels are straight?

Is it to align the wheels, then remove the steering wheel, center it,
and put it back?

Thank you very much for your help.

Do your best to center the rack beforehand.  Using a pair of locking
pliers
on the splines (with something covering the splines to protect them),
count
the number of turns and try to determine the halfway point.  Then
reattach
the coupler while the steering wheel is centered.  If the steering wheel
is off center when done, then make the final adjustment by removing the
wheel and reinstalling.
