what kind of differential on the back of an X300? (3.2 XJ6 1995)
was behaving in the slippy like a limited-slip-diff maybe?

You could get either option from Jaguar. Limited slip or open
differential.

Is there a simple way to confirm which I have? serial number code on
the case perhaps?

I dont know the numbering system. You could alway jack both rear wheels
off the ground and spin a wheel; if the opposite wheel turns the same
direction you have a limited-slip.
