Up and Down Oil Pressure on 88 jaguar xj6

I have a 1988 jaguar xj6 with about 164k on it.  The oil temperature
gauge goes up to normal range when you first start up the car, then
when you start driving and stop the oil temperature goes all the way
down, then back up when you start driving again.

Oil temp or pressure?

Actually, it doesn't matter, check pressure out with a mechanical gauge. If it
measures OK, you have a flakey sender unit, which is a really common occurence.
