Can I use Amsoil Synthetic Universal Automatic Transmission Fluid in an
'83 300D?  If not, what do you folks recommend?

I used Mobil1 ATF in my 83 300SD and I noticed a big differnce in how it
shifted and ran.  Try it, you'll like it.

I've got Mobil 1 in my 380SE tranny and amsoil in the diff. I think amsoil
is pretty good. A guy a know who builds pro am said mobil 1 is hard to beat
but amsoil v mobil 1 boils down to personal preference. The only reason I
have mobil 1 in my tranny is it came highly recommended.

Amsoil is better, as it is a pure synthetic.  Mobil1 is a synthetic/dino
blend.  Amsoil also doesn't depend on imported oil, if you're one of those
that is on the boycott wagon.
