Is it possible to adjust the transmission switch position so it engages
properly? I've adjusted the shift linkage to make it work but now the  shift
lever feels like it is barely in the park position, i.e. it doesn't feel
solidly in park. Car is '91 300 CE.

Sounda like you need to replace your linkage bushings.

So...is the switch position adjustable?

No, the neutral safety switch is not adjustable. Only the shifter linkage is
adjustable to give it the right throw to shift gear only.
