suppose the original engine of a 1987 260E car has been replaced by the
original owner. Would it be possible to determine the VIN of the
engine that is currently in the car? Is this VIN stamped somewhere on
the engine? It is useful for determine correct part number to order
etc.

The car's chassis has a VIN #. There is an engine serial number,
typically stamped on its left side, on the block, NOT the cylinder head.
Engine Parts are typically specified to Engine # xxx.xxxx or from engine
# xxx.xxxx.
So get the engine number.
Probably, only M-B would be able to match an engine's number to its
original VIN.
