It's time for my first oil change in my 2003 Altima. The dealer made a
big deal about taking to the dealership for not just the oil change, but
all sorts of servicing points spelled out in the manual. (Although,
oddly, the manual says it should be done after 3750 miles and the dealer
wants me to do it at 3,000. Or perhaps not so oddly...) My question
is, am I okay just taking it to an oil changers or will that futz up my
warranty because I didn't bring it to the almighty dealer?

Just save all your receipts so you can prove you had all the recommended
services done and you will be fine.

As long as you document when you had oil changes and keep within the
servicing schedule, it doesn't matter where you go. Sounds like the dealer
is trying to put a little scare into you so that you go to them. Go where
you want to.
