Just recently my parking brake light will not shut off on my maxima.
Occasionally while I am driving it will shut off but one I turn the car
off and turn it back on the light comes back on.

Does anyone have any ideas

The brake light also indicates low fluid level in the master cylinder.  Top
it up to the MAX line and see if the light starts behaving again.

It could also be that the switch on the parking brake lever that triggers
the light has come loose or gotten partly dislodged.

Last possibility - the brake lever might not be fully seating when you
release it.  Is the parking brake in adjustment?
