I am all but certain your machine has a conventional thermostat. In fact
I've never heard of a GM vehicle that did not have one. You're not thinking
of the electrically controlled cooling fans are you?

This car most definitely has a conventional thermostat.
How long does it take to overheat?
Do you have heat in the passenger compartment?
Are there any obvious leaks under the hood?
Is there sufficient coolant in the system?

It takes about 30 to 45 minutes to overheat, and the passenger compartment
heat gets hot when turning a corner and when the temp gets into the red.
Today I noticed 2 bleeder valves. One at the top of the cooling system
on a metal section of the heater line, and the other is just after the
housing under the throttle body on the coolant to rad return. I also seem to
not be able to completely fill the system. I can only get about 5 litres of
water into the rad. Is there a procedure to fill and possibly bleed the
coolant system?
