Hmm. If the system is overgassed, it won't work as efficiently, and you say
it works well when it does. Overgassing can cause the compressor to cut out,
but normally the pressure will drop quickly in this case and the compressor
come back on ( a few seconds later).
Feel the high pressure pipe from the compressor, as a general rule, if it
gets too hot to hold, the pressure may be too high. Only way to be sure is
to get the gauges on.

Not really. If the fan is working, the condensor (which is right at the
front of the car) will only see outside air temp.
