Hey bud, I've got a 455 cub in my 73/80 hybrid, and my dad had exactly
your situation, he bought a numbers matching 68 but it had a sickly
striaght 6 in it.  We ripped the 6 out and put an old pontiac 400 from
god-gnows-where in, and with no sort of high-priced equipment we toast
imports all day long at the traffic lights :)  (Nothing against em, I
just think they're funny-looking)

So I'd say Buy that engine!  375 is a STEAL, especially if it's a Ram
Air III or IV, though I don't know what years they made them exactly.
