I parked my 1991 964 last night and when I turned the engine off I
heard a loud fan still going off near the front of the car. I have
never heard this before. What is this?
I stopped it as I have a battery shut off switch to prevent a battery
power drain.

Had you just been driving the car hard? Was the temperature of the
engine higher for any reason? My guess is: it was your oil-cooler fan.
You should've let it run to cool things down. It will eventually
stop. If it doesn't, then there's a problem.

Not really, drove it gently home for about a 10 min drive. Didn't
realise I should have let the fan run. The weather was quiet cool so
hopefully no damage done.

The issue may be worth investigating as to why it clicked on and whether
or not it would've stopped. Does it run if you make the car hot again
(w/power)? It might be a bad relay or switch. Or you might just have a
small troll in the trunk. Whichever.

One other possibility...but based on your "weather report" it is doubtful:
The front A/C condenser has a fan that blows down on it from it's position
inside the front trunk. It's relay can get stuck also...even though it's
supposed to turn off when the A/C is off.
I too suspect that it's the one mounted with the front oil cooler
