nissan fairladyZ/350Z (poor boy)
they put also a camera pointing to the drivers feet while driving, very
interesting to me, but I am a little bit intrigued when they push (just
touch it) the brake for half a second on any straight of the track.
why do they do this? It seems to me useless and a waste of time

Seen a few Best Motoring videos.
Quite often subtitled in english, but even without, very entertaining
watching even if you can't understand a word.
Just let the cars do the talking.

I haven't yet watched the video, but one reason to do as you describe is
to set up the car for cornering. If you just touch the brake for a
moment just before a turn, it momentarily shifts the weight of the car
forward, which puts more weight over the front wheels, which improves
traction.
