water heater goes out

The water heater on my 2000 Coleman Niagara will not stay lit when the wind
blows from the left side.  Has anyone found a solution for this problem?

Yep.

Okay, you need to make another 'windbreak' for the pilot area.  Preferably
out of metal...

yuo may want to clean the pilot rod and maybe turn the pilot gas a bit
higher.
