Did someone saw or use any retractable/folding storage space (shelves,
wardrobe, pantry) that we can mount in a popup either hanging from the roof
or sitting on a counter ? I've ween folding shelves for the bed area but
nothing within living space.

I've used closet storage that collapses and mount it to the walls or
roof with no problems. They can also be hung from a pole at either bunk
end as well.... The best part is you can in most cases leave them in and
they collapse when you close the camper.
There are a couple of companies that make a collapsible cube like
storage that is made of coreplast which is like cardboard but plastic.

Their something on this order. The ones I found were the same size but
had velcro loops at the top. I put a couple of grommets in and just
screwed them into the ceiling. One is hung off of a pipe attached to the
wall above the sink to provide storage there as well.... works great.

I also have two of these on walls at each end of the camper.. they have
a built in hamper at the bottom and allow for placing clothes in them
and then taking just the hamper parts to the van when we leave so
clothes can be done....

We also have one of these

that sit to the right of the sink and hold just about everything that we
need for food prep and storage for our daily things.
When the camper is shut it fits nicely just inside the door. We had two
double drawer ones for a while and they worked great too.... just a
matter of thinking outside the box. When I see something I always look
at how can I use it and how can I modify it so it's more useful....
It's amazing how well somethings work out.
