spinach pie

2 yellow onion diced
saute in skillet w/s&p just till translucent
minced garlic to taste

4 eggs into bowl and whisk
add 3 packages of drained frozen spinach
add 1/4 pound of cheese plus 1/4 cup of parm
1/4 cup of bread crumb
add garlic and onion and fold gently

into a 9" spring form pan and press gently

cut philo into strips and into a bowl, cover with 1/4 cup
of olive oil and top

375dF oven for about 1 and 1/4 hr.

A similar recipe is in the South Beach Diet book. It's not bad, but my
wife replaced the spinach with broccoli. I think your recipe is a form
of Quiche <sp>.

Hey, now is the time to make it with zucchini instead of
spinach.  Sounds good.

I love zucchini sandwiches !!!
Peel it, then slice it about ¼" thick and fry it in oil until brown on both
sides.
Put it between 2 slices of bread, salt to taste and you have a delicious
sandwich.

Slice, add olive oil and grill it does the same but with a nuttier favor.
