I would assume a Class B motorhome would be a good place to start.
Are there any models that are only about 7' tall?

There are some (GRTV Westy, for example, if I have the name right) whcih
have pop-tops similar to the older VW campers. But most others are
probably too tall for you.
I have a Class B built on a '95 Dodge chassis. Minimum height clearance
is 8'4" (100") to the top of the roof air.
Some Roadtreks use a rear-mounted air conditioner, which reduces the
overall height, but I doubt there's that much difference. And Roadtreks
are priced toward the upper end of Class Bs and not worth the extra
money, IMO.

Good luck finding one. Most standard pick-ups are over 6ft tall.
Hank <~~~~has 10ft door that isn't tall enough

Our class B with the Sportsmobile top lowered was 7'6" IIRC - and
would not fit in our car garage.
