I've got 1999 starcraft 1706 pop-up with a roof mounted air conditioner.
Every so often condensation from it leaks into the camper. Usually I
just have to tighten the 4 bolts that hold it to the roof to stop the
leaking. Last weekend however that didn't work and it continued to leak.
What's the most likely cause and is it something I can easily fix
myself? TIA

You have probable crushed the seal between the a/c unit and the roof.
Either a new seal or a tube of silicon sealant should fix you us.

Two causes. Most likely replacing the seal will be all you need to do, BUT
if you tightened too much and cracked the plastic bottom pan, then repair or
replacement will have to be made to it.

I am not sure on your model, but some of the condensation should be
directed (flow) towards the fan blade ring which will pick it up and
blow a mist back across the evaporator. The remaining should flow out
a drain hole. It is possible that the drain hole is clogged with
debris or you are unlevel.

Thanks. I guess a clogged drain hole is the easiest thing to check for
so when I get it cranked down later today I'll check that. I presume
that just involves removing the outside cover?
I do fear that what Tom suggested may have happened too. Last time it
was leaking and I tightened the bolds I heard a popping or cracking noise.
