Just stick a green transparent plastic cover over the display - or
wear sunglasses.

You could clean the car more frequently and use Scotchguard, and foot
mats.

Lots, and I wouldn't have called back either. You could just do over
the seats with black shoe dye then polish the seat leather with black
boot polish.....

and will result in a car that looks bitsy and is worth less than it
was before you started modifying it. You should re-spray the body
too, to get away from that horrible gray (silver?)
So don't be a slave to an unrealisable task. You could spend many
thousands and still have an unsatisfactory result.

Yes, if you can, but why not just sell the car and buy another with
the colours you want?
PS If you hate the colours so much, why did you buy the car in the
first place?

May have been sarcastic .... but. My single line would have been
instead of spending a lot of money modifying the car, take the money and
exchange for a car you would rather have. Whatever the loss you make it
may not be that large (it may not even be a loss) if you are considering
buying brand new saab parts to redo the inside of the car. Carpets
linings, door panels, seats and whatever else it has.
The dealer probably does not want to know ... not becuase they make
enough money (they can always make more) ... but because once the work
is carried out they see it as a certainty that you might complain. Also
, how serious do you appear to the dealer in wanting this done. It will
cost them a lot of time to price all the parts (and the labour is
another story. This kind of alteration is more common to body shops
than dealers (unless in oz saab dealers combine with bodyshops ... not
common in the UK).
IMHO look for another car. One you know the price to change ... the
picture will be clearer.

I must have missed that fist time round. It would be pretty easy to
change the colour on my 2001 9-3 SID. Yours may well be the same. The
LCD panel is clear and the illumination is white. The orange colour
comes from a piece of orange plastic between the bulbs and the
display. Finding a suitable bit of plastic in your favorite shade
would be the most difficult part.

How about leaving a tin of paint in the car and then parking it in a
desert until the tin explodes. I'm sure the insurance company would be
sympathetic...

Probably really easy actually.
Buy some of the colour filter that's used in theatre lighting. There's a
vast range of colours.

You could all so get the interior painted the colour that you like, Here in
Perth Aust there is a mobile guy that does it, looks very good when finished
there maybe someone similar where you live
