The one disadvantage to finishing a partial "cost is no object"
restoration is having to finish it that way, not the greatest thing when
the car is being built for eventual resale. For example the engine was
in pretty good shape, engine bores could have just been honed and
probably would have been fine, but it's getting a bore and new pistons.
The same with the labor, I find myself skim coating and sanding the
surface rust on the fan shroud and wire brushing and detailing every nut
and bolt. Tomorrow, I'll sandblast, prime, and paint the wheels, install
the new, correct 1 inch whitewalls. I have most of the trim back on, but
still have boxes of parts to install. Surprisingly, I'm only missing a
few very minor parts.

I assume you don't have the heat & humidity we have on the gulf coast, but I
am a few years your junior, & I envy your energy!

Not so much energy, just have the time to do it. Just last night at
around 11 PM, the wife had gone to bed, and I drifted out to the garage
for a hour or so to do paint some small parts.
