My dealer says the Bridgestone Winterforce tires work well in snow and
slush - do they? And how about on dry roads after the snowplow has
already been through? Are they terribly noisy?
Any other winter tire suggestions?

It's a snow tire. Of course it's going to be noisy on dry pavement.
Tirerack reviews mostly say that the noise is tolerable.
