Lately, on a cold start, it makes a noise after the actual start of
the engine that I can best compare to a chattering squirrel.  It
almost seems like the starter motor doesn't stop after the car starts
and I let go of the key.

What could this mean?

Nothing else seems wrong.  Doesn't happen if the car is warm.
