Does anyone know of a way to recalibrate the speedo due to a tire
diameter change?

Check with the local 4WD / off-road shop, they probably have the spur gear
to match their tires.

What year and type of vehicle?
Mechanical or electronic speedometer?

One excellent option is to regear the axles to match the change in tire
size.  Benefits are correct speedo/odo readings and you get the torque
back that was lost in the tire size increase.
