2005 corolla, A/C light does not come on in defrost mode. My Trooper
does in both defrost and floor/defrost. Is this normal?

Almost all cars since 1999 have the AC running when the defroster is on. I
think it's a damn nuisance...if I want the AC on, *I'LL* turn it on!

Well, my A/C light has never come on with the defroster. Not in any car,
not even hubby's new(er) Scion.

And it doesn't interfere with the temperature? Weird. I didn't think the
A/C would even function with the A/C on.

It may be the way to help car owners that don't know how to use the
defroster function. You normally should have the A/C turned on, the heater
control set up for heat and the outside air/recirculate set to bring in
fresh air from the outside.
Many people don't know that the A/C only puts out one temperature (coolness)
and the heat control just puts hot water from the radiator/engine cooling
system into the heater to help control the temperature. The A/C will cycle
the compressor off and on also to control the temperature.

The AC being on in defrost helps dehumidify the inside. In any of the cars
I've had the AC light doesn't come on but you can hear it "cycle".

Sometimes, the defroster alone can't deal with the humidity INSIDE the car,
from multiple passengers, and moisture evaporating from wet foot mats.
You've probably seen fools driving down the road with all windows fogged up.
Turning on the A/C produces dry air to help with the problem. In some cars,
the A/C comes on automatically when you use the defroster. In others, you
have a choice. By the way, A/C does not mean "cold". When defrosting, you
turn the temp selector to warm. Now, you have dry heat, and it works in the
same way forced air heat helps clear the fog out of the bathroom during a
shower.
All cars should offer a choice of using it or not. For half the year, I find
I don't need it. Why affect mpg by using the A/C when it's not needed?

probably do not want to be blowing humid/damp air at the windshield

It could very well mean that something is amiss with your AC, something
that is causing it not to work. Perhaps it is the belt, perhaps it is
something more insidious. I believe that it should be automatically
coming on with the Defrost setting to dry out the air. Try using the AC
only and see if that causes the light to come on. See if it makes cold
air come out (I would do this when the car is all warmed up inside and try
it using 'inside air' to see if it chills that air). If the AC works fine
it might only be that the light bulb is burned out or it is not telling
the AC to turn on anymore for some reason.
Come tell us what this test reveals.

Or, it could mean her car is not supposed to have the AC come on
automatically with the defroster. Mine does. My son's 96 Camry does not. I'd
suggest looking at the owner's manual, even if it looks scary, and requires
going outside to get it.

It's normal. The defrost mode uses the a/c compressor. Most newer
vehicles design their systems to operate similarly. Your MPG will be
reduced as well when driving in "defrost" mode due to the extra energy
required to run the a/c compressor. I drive an '05 Corolla LE and it
works just like yours.

OBTW ronbon, if you have the recirculate button pushed in and you select
the defrost mode, it will cancel the button out. Normal.
