An Easy Out works. An easy out is a drill-like thingie that is wrapped
backwards. You drill a small hole with a regular drill into the center of
the screw you want to remove, then insert the easy out into the hole.
Turning the easy out in the direction to loosen the screw will cause the
easy out to bite harder and wedge itself into the hole you drilled. When it
becomes tight enough, the screw will drive itself out of the threaded hole
that it is snapped off inside of.

Since it's plastic, how about just drilling a slightly smaller hole down the
center of the plastic screw until it's all reamed out and becomes shavings
which will back out of the hole?

That would be too simple.
