hi , ive got mondeo tddi used as a taxi , problem is the temp gauge lowers to almost cold when car should be normal, even after say 3 hr driving temp just drops to cold then after a while returns to normal . its a 51 plate , weather not to cold 10c , no other problems . is

130k miles, engine runs fine, usually no smoke. Under boost with plenty of throttle there's a bit of grey[1] smoke, not bad but noticable at night in the headlights of a car following. What's the most likely cause ?
